Recipe: Tomato Crostini

Friends are coming over unexpectedly. Tis the season!  Naturally you have a bottle of wine but what to serve?

This is what I do.

  • 2tbsp olive oil
  • Two tomatoes
  • Salt/pepper to taste
  • Basil-fresh is nice but dried will do as well-2tsp
  • Parmesan cheese-2tbsp but if you like cheese....

Add oil to saute pan and heat. Add chopped tomatoes, salt and pepper. Gently sauté until it becomes a sauce which is about ten minutes depending on how many tomatoes you use. Add fresh or dried basil. Continue to sauté, then add 2tbsp grated Parmesan cheese. Taste and adjust flavours.

Serve with crackers or sliced baguettes lightly toasted.

You can adjust the number of tomatoes and seasoning according to how many people drop by.

I also add other quick things to add to the food table like a bowl of nuts, chocolates or fruit. The rule is to never let your guest think you are anything less than prepared!
