Quick and Easy Greek App for Any Occasion

When I broke my elbow last April (exercising!), and of course, it was my dominant arm, it was pretty hard to do even the most basic of things. But one good thing came of it! My friends and family were so caring, helpful, sympathetic, and considerate. There were flowers and notes and care packages. I was pretty thankful for that!

This one stands out though-my friend Lydia came over to my house with this appetizer, complete with a bottle of wine (so needed!), and the recipe written down for me too! I think she knew I would be doing this on repeat and I have to admit she was right!

It is so simple to assemble and perfect for when friends drop by unexpectedly or when you have to take an app to an evening out especially during the holiday season!

Be aware that there are no set amounts to use, so feel free to assemble more or less of each ingredient according to your taste!

GREEK EDESSA FETA

PREPARATION:

  • Cubed feta cheese

  • Cherry tomatoes halved

  • thinly sliced red onion

  • pitted kalamata Olives halved

  • chunked mild whole Banana Pepper from jar (sliced)

  • hot ringed sliced banana peppers from jar

  • Sprinkle with olive oil, a tablespoon of olive juice and a tablespoon of pepper juice

  • Sprinkle with oregano flakes

Cook at 350 degrees in oven 5-10 minutes and finish for a few minutes under the broiler

I serve this with pita crisps but feel free to use crackers of your choice.

 **Note-I use banana rings and that is spicy enough for me
