Tomato Tart Recipe
This recipe continues to be very popular with my family and when I posted a video showing how I make it, I got so many positive responses, I thought I would share it again with you.
I really love a recipe that can be thrown together quickly and this one fits the bill.
INSTRUCTIONS
Preheat your oven to 350 degrees.
Start with a Pillsbury pie crust that you can find in your grocery store dairy case. There are two in a pack and can be rolled out individually.
Roll out and place on a parchment lined cookie sheet.
I then add basil pesto. If you have homemade pesto, fabulous! But I also purchase Costco basil pesto. To me, it is really close to homemade!
Add about 2 tbsp of pesto (more if you love pesto) and spread leaving about 1/4 of an inch at the edge.
Slice some tomatoes and lay them in a circular pattern. Add some ground pepper. You can salt it lightly and to taste.
Bake for about 15-20 minutes or until the pastry edges are golden.
Remove from oven and add some torn fresh basil. Cut into slices when warm.
This is the perfect quick appetizer or add a salad and a protein for a lunch or light supper.
