White Bean and Kale Toast

I have been a vegetarian for over 25 years and this recipe is my go-to for breakfast, lunch or dinner whenever I need some greens and protein. 

I made this for my carnivore-loving son for breakfast one weekend, and his response was "Surprisingly hearty". I took that as a compliment : ) By the way, he cleaned the plate.

Ingredients:

  • 2 tbsp olive oil

  • 1 yellow onion thinly sliced

  • 2 cloves garlic thinly sliced

  • 1 15 oz. white beans, rinsed

  • 3 cups baby kale

  • Salt and Pepper

  • 2 hard boiled eggs, finely chopped

  • 4 tsp grated parmesan

  • 4 inch thick sliced baguettes toasted

Instructions:

Heat oil on medium heat, add onions, garlic and saute until tender about 6 minutes. add beans and 1/3 cup of water. Add kale and season with salt and pepper. Toss until kale wilts about 2 minutes.

Add chopped egg and parmesan on top and serve with toasts.
